Creamy and delicious risotto

I was home alone last night so I decided to do a meat-free day since I don’t eat a lot of meat anyway. So I made something that I love – Risotto!!
The amount I made, however, would be perfect for 4 people and was definitely too much for me… But I’m used to cooking for 4, so I made too much out of habit 😀 



  • 300 g (10.5 ounces) of risotto rice
  • 1 liter (4 cups) of chicken stock
  • 1 onion
  • 2 cloves of garlic
  • 3 tbsp of olive oil
  • 200 g (7 ounces) of mushrooms
  • Optional: 3 tbsp of white wine
  • Optional: Parmesan cheese
  • Salt and pepper to taste


  • Chop the onion and the garlic and saute them in the olive oil until the onions are seethrough
  • Add the rice and stir for a few minutes
  • Add the chicken stock and the 2 tbsp of the white wine
  • Let it cook while stirring once in a while
    • The rice needs to soak up most of the chicken stock
  • Chop the mushrooms and cook them on a pan until they are soft
  • When the rice has soaked up most of the stock, add the last tbsp of white wine plus the salt and pepper
  • When the rice has also soaked up the last liquid, add the mushrooms and the parmesan cheese and then stir
    • I used 3 handfuls of grated cheese to the dish 
  • Enjoy! 
    • I ate the risotto with some edamame beans drenched in sweet chili sauce and some dark bread
