Chocolate & caramel poke cake

I’m on summer vacation now, and that calls for celebration, so I baked a cake! I wanted to make a gooey chocolaty cake with a little something extra, so I made a poke cake, with the brownie base from my Amazing and easy brownie recipe (Don’t worry, I’ll write the recipe here too so you don’t have to click back and forward) and I used my caramel cream from Chocolate cake with salted caramel, then I added a little bit of fudge icing and some caramel crunch and created a cake so delicious I might make it again tomorrow!
When you look at the recipe there seems to be a lot of things to do, but it is actually super easy, so don’t give up! 😀

Ingredients:

Cake:

  • 180 g (1 1/4 sticks) of butter
  • 2 eggs
  • 1 tsp of vanilla essence
  • 2 tsp of salt
  • 4 tbsp of cocoa powder
  • 1 1/2 dl (0.6 cups) of flour
  • 3 dl (1.2 cups) of sugar

Caramel:

  • 1 can of condensed milk
  • 75 g (2.6 ounces) of muscovado sugar
  • 75 g (1/3 stick) of butter
  • 2 teaspoons of salt

Fudge icing:
You can also buy it finished in the stores 🙂

  • 400 g (2 cups) of sugar
  • 4 tbsp of cocoa powder
  • 1.5 dl (2/3 cups) of milk
  • 110 g (1 stick) of butter

Directions:

Cake:

  • Mix all the dry ingredients in a bowl
  • Melt the butter over medium heat
  • Mix the eggs and the butter
  • Mix the eggs and butter with the dry ingredients 
  • Bake for 15 minutes at 200ºC (390ºF)
  • Set aside to cool

Caramel:

  • Put all the ingredients in a saucepan over medium heat
  • Bring to a boil while stirring every minute
  • Stir for 8-10 minutes while the caramel is at a simmer
  • Poke holes in the cake and pour the caramel over
  • Set cake with caramel aside to cool

Fudge Icing:

  • Mix sugar, cocoa powder, and milk in a saucepan over medium heat
  • Bring to a boil and let it boil for around a minute or two
  • Remove from heat and add butter
  • Stir until smooth and thick
  • Pour over the cake instantly as it dries quicklyOptional: Add caramel crunch on top of the cake
  • Serve and enjoy!
